You probably grew up with rice pudding, but you’ve never had it like this before! Give this recipe a try and discover how delicious a coconut milk-based rice pudding can be.
Vanilla Coconut Rice Pudding
3 cups brown rice
14 cups coconut milk
1/3 cup coconut palm sugar
2 tsp. vanilla extract
pinch of pink Himalayan sea salt
Add rice, 2 cups coconut milk, sugar, and vanilla extract to a large pot.
Cook over low heat until milk is absorbed.
Slowly add 2 cups of milk at a time and cook until absorbed before adding another 2 cups. Repeat until you have used 12 cups of milk and have 2 left over.
Remove pot from heat and allow to cool. Add remaining 2 cups of milk and stir. Top with assorted berries, if desired.
Enjoy (and surprise your friends with the fact that the recipe is completely vegan)!
