This recipe really is just too good to be true. It’s basically a healthy, gourmet version of Rice-a-Roni! And, it’s super quick too. After I adapted it from a Mexican friend’s recipe that uses lentils as the base (another great option), I found that it’s also a great meal to help balance out Vata as its rich creamy coconut, earthy brown rice and warming ginger and paprika are both nourishing and stimulating to this dosha.
So without further adieu I present to you my Creamy Coconut Ginger Brown Rice!
2 Cups of brown rice
1 Can of coconut cream
2 Tbsp powdered ginger
1 Tbsp paprika
3 Crushed garlic cloves
Sea salt to taste
Cook the rice according to instructions
Crush and mince the garlic and add it to the brown rice as it is cooking
Once the rice and garlic mixture has finished cooking stir in the coconut cream, ginger, paprika and salt.
Serve warm with a sprig of parsley and enjoy ;)
