Raw Key Lime Pie

As promised in our 14 Shocking Facts About Sugar post, here is the first in a line-up of guilt-free desserts. They will all be packed with nutrients but void of refined sugar, grains, bad fats, eggs, dairy, gluten… Pretty much everything associated with desserts but the one thing not compromised is taste – they are orgasmic.

Here is recipe one – Raw Key Lime Pie. It is the perfect balance of tangy and sweet.

Ingredients

Crust:
2 Cups macadamia or cashew nuts
1.5 cups coconut flakes
3 cups pitted dates

 

Filling:
3 large ripe avocados, peeled and pitted
1 cups fresh lime juice
1 cups of maple syrup (preferably Grade B/2 or C/3)
1 T coconut oil

Directions

Blend all of the crust ingredients in a blender or food processor. Press the mixture into a deep pie dish, all the way up the sides.

Blend all of the filling ingredients and pour into the crust. Refrigerate for about 20 minutes.

Done.

If you are planning a picnic you could assemble the yumminess in mason jars as in the pic.
