Vegan Recipe: Dad’s Rice Concoction

As you all know, I am visiting my family in Connecticut. Well, my dad, although he would deny it, is a great cook. He’s one of those people who can throw a bunch of ingredients together and make a really good meal (and on the cheap and easy), and that’s what he did the other night. I have to apologize for the bad picture, I was trying to take it in the kitchen while the rice was in a pan because I forgot to take the picture of it on my plate before I ate it :)
Ingredients
- Boil in a bag rice (he used 2 bags)
- 1 can Mexican corn
- 1 can red kidney beans
- 1 can seasoned diced tomatoes
- Season to taste with:
- Garlic salt
- Garlic powder
- Onion powder
- Onion Salt
- Celery Salt
Directions
This is going to sound almost too easy, which is one good thing about this meal. Cook rice based on directions on the box. Stir in corn, kidney beans, tomatoes and heat. Season to taste with spices (believe it or not, my dad used all the spices and it came out amazing!).
Sounds too easy, right? That’s why I plan on keeping this recipe close :)
